I agree its a very complex issue. I also agree with complex process of separation, transformation, and stratification of particles.They don't form from nothing- they are already part of the stellar material. When a neutron star forms, there is a complex process of separation, transformation, and stratification of particles. AFAIK there is no observational evidence that is very useful for understanding the interior of neutron stars, only mathematical models. It's a complex issue (and one that you did not ask about in your original post).
