What does "digital projection" mean?

It means that a digital image of the entire surface of the object was constructed from individual images (such as from Cassini), and then a 3D model was rendered by mapping the surface image onto a sphere, ring, etc.

It's a little unclear why this topic is titled "Gasparri", or gives Daniele Gasparri as the copyright holder. The image itself indicates its copyright belongs to Björn Jónsson, and it (as well as the image maps used) can be found on his pages.

I think we can rule out projection in the sense of slide projectors. I think what we are talking about here is like the digital creation of a view not captured directly, but projected from other scenes.

I see. I've never heard of "digital projection" before but figured that's what it was just from looking at it. It seems like an odd name to me.

It is an odd name but the general idea is an old one:

The Hereford Mappa Mundi, about 1300, Hereford Cathedral, England.

I don't think the comparison is a very good one. Nor is the name odd- it describes very well the process, which is to digitally project an image map onto a 3D model. That's nothing like the map you reference. The closest non-digital analog is the production of a globe, where individual flat map segments are attached to the surface of a physical 3D model.
