I, too have never seen much use in stereo imagery. I always wondered how we could expect someone to give reliable analysis if he can't simply look at an image to tell a ridge crest from a valley bottom. Photogrammetry, where you use differences in images to construct contour maps, is a whole other matter.
But its easy to sanitize them. Copy the image into a drawing program. Adjust the color balance to eliminate one of the channels. Then save the result as a gray-scale image.
