The annotated APOD brought up through the "Sagittarius to Scorpius" link in the explanation may be of help to you in the percentage of the sky part of your query.

Looking at the original picture at http://astrosurf.com/sguisard/Pagim/GC.html does anyone know what % of the sky this picture represents and approximately how many stars and or galaxies are in the picture?
